About the coffee:
Bubble Gum begins at origin with a carefully controlled fermentation process designed to showcase the vibrant character of a classic anaerobic natural coffee.
Only fully ripe cherries are selected before undergoing a 36-hour anaerobic pre-fermentation in sealed GrainPro bags. This oxygen-free environment encourages the development of intense fruit character while laying the foundation for the coffee's distinctive sweetness. The cherries are then transferred into hermetic tanks and fermented under shade for an additional 96 hours at a stable temperature of approximately 23°C. During this extended fermentation, the coffee develops the vibrant fruit-forward profile that inspired its name, bringing together notes reminiscent of strawberry candy, bubble gum, tropical fruit, and red wine.
Following fermentation, the cherries are slowly dried over approximately seven days using a carefully managed mechanical drying process. Rest periods throughout drying help ensure an even reduction in moisture while preserving clarity, sweetness, and structure. Once drying is complete, the coffee rests for 30 days in GrainPro bags, allowing the flavors to stabilize and harmonize before export.
