Colombian Young Producers + Sebastian Ramirez (12 oz)
The Story Behind the Coffee
The Young Producer Development Lot is a collaborative Colombian coffee built from the most promising experimental lots produced by the next generation of farmers—and roasted by us.
We sourced this coffee green from a development lot designed to give young producers room to experiment with fermentation and processing in small batches. Rather than releasing dozens of tiny microlots, these coffees are carefully evaluated and blended into a cohesive lot that highlights their shared strengths.
Once the green coffee arrived at our roastery, we developed a light roast profile focused on clarity, vibrancy, and sweetness—allowing the fruit-forward character of the coffee to shine while preserving a clean, structured cup.
Origin & Producers
- Region: Andes, Sonsón & Armenia
- Country: Colombia
- Producers: Young, early-career farmers contributing small experimental batches
- Altitude: ~1700 meters
Each producer works in small volumes, often 20–30 kg at a time, refining fermentation and drying techniques before their coffees are blended into this larger, consistent lot.
Process
This coffee is a blend of:
- Natural process coffees
- Extended fermentation experiments
Carefully selected anchor coffees help maintain balance and consistency. The intent isn’t heavy funk—it’s expressive fruit character with transparency and elegance.
Flavor Profile
A bright, articulate cup with layered sweetness and a refined finish:
- 🍓 Strawberry
- 🍎 Red apple
- 🍫 Cacao nibs
Juicy fruit notes lead, followed by gentle chocolate depth and a crisp, clean structure typical of a well-developed light roast.
Why We Love This Lot
This coffee represents growth—both at origin and in the cup. It gives young producers space to experiment while delivering a coffee that feels thoughtful, modern, and exciting.
Roasted light, it’s especially appealing to drinkers who enjoy clarity, acidity, and origin-driven flavor.
Brew Recommendations
This coffee shines with methods that highlight nuance:
- Pour-Over: Exceptional clarity, bright acidity, and layered sweetness
- Batch Brew / Drip: Clean and vibrant with a refreshing finish
- Espresso: Juicy and fruit-forward with a delicate cocoa backbone
We recommend slightly higher brew temperatures to fully express sweetness and aromatics.
