Our Barrel Aging Process

Another layer of flavor. Still unmistakably coffee.

Our barrel-aging process adds a layer of whiskey and oak to the coffee’s natural profile. We look for balance—bringing another dimension to the cup while keeping the coffee’s own character at the forefront.

Green coffee beans ready for selection01

Bean Sourcing

Balance begins with the coffee. We select green coffees with distinctive profiles that complement whiskey and oak. Each coffee’s natural character is the foundation for everything that follows.

Oak barrel and bourbon for barrel conditioning02

Barrel Conditioning

We condition American oak barrels with a carefully selected whiskey, choosing aromas that complement the coffee. This prepares the barrel to contribute another layer of flavor without overwhelming the beans’ own profile.

Green coffee beans entering an aging barrel03

Bean Aging

The green coffee rests in the conditioned barrel, absorbing aromas from the whiskey and oak. Leon, our owner and roaster, uses his senses to judge when that added layer is in balance with the coffee’s natural character.

Roasting for Balance

After aging, we roast the beans to bring those layers together. The aim is a cup where the coffee’s origin and character remain clear, with whiskey and oak adding depth to the experience.

The barrel adds a layer. The coffee keeps its identity.

Experience the Layers in Cold Brew

Our barrel-aged cold brew offers another way to enjoy that balance. It starts with coffee aged before roasting, bringing the coffee’s own profile and the barrel’s contribution together in the finished brew.

Finally. Roasting.

After relying on his senses to determine the optimal point for removing the beans from the barrels, Leon, our owner and roaster moves onto the roast proccess. He is now sure that the coffee will achieve a balanced infusion of whiskey, oak, and the coffee's own inherent flavors. We ofter a variety of roast levels among our barrel aged coffees, from Dark ++ to Light. Try the beans out for yourself:
