This Bubble Gum coffee from Caldas is all about precision and flavor. It starts with a 48-hour water immersion, followed by anaerobic fermentation and careful sun-drying. The extended soak is the secret—it adds clarity and complexity to the cup. Expect a clean, vibrant brew with intense, fruit-forward character true to its name.

About Ivy Mountain Distillery:

Ivy Mountain Distillery was founded by Carlos Lovell at the age of 84, drawing on over 150 years of family moonshining tradition in the Georgia mountains. Known for their smooth sour mash whiskeys, the Lovell family used natural spring water from their own Blue Ridge source—a key ingredient in their locally crafted, small-batch spirits. The unaged “white dog” whiskey was aged in oak barrels from Jack Daniel’s, with aging times determined by the master distillers themselves. Carlos passed away in 2020, and Ivy Mountain closed its doors soon after. To honor his legacy, we partnered with Blind Barrels and CoffeeLove Roasters to create a one-of-a-kind barrel-aged coffee—using one of the last remaining barrels he helped craft. This release will never be repeated.

The Restrepo family has been shaping exceptional coffee in Chinchiná, Caldas for nearly four decades. It all began with Elmer Restrepo, founder of Jardines Chambaku, who fell in love with coffee through dry milling. Today, his son Felipe carries the torch—bringing precision, innovation, and a passion for experimental processing to every batch. With over 150 hectares of coffee under cultivation, the Restrepos are known for pushing boundaries, especially with their naturally processed lots.
