About the coffee:
The Wush Wush coffee, is a rare variety originally from Ethiopia, is known for its unique floral and fruity flavors. It's now grown worldwide, producing diverse taste profiles based on where and how it's cultivated.
One specific Wush Wush variety from Finca Campo Hermoso, managed by Edwin Noreña, undergoes a meticulous process. After harvesting, the cherries are fermented anaerobically for 16 hours, dried on raised beds for around 20 days until reaching 10.5% moisture.
Edwin has been tending to Finca Campo Hermoso for over 30 years, focusing on specialty coffees since his father's passing. He's also a key figure in the Colombian coffee scene, serving as a Q Grader, Q Processor, and Cup of Excellence judge. Our partnership with Edwin began in 2021, and Campo Hermoso, along with the Santuario Project led by Camilo Merizalde, is a hub for researching and experimenting with fermentation techniques. This knowledge is applied at other Santuario Project locations in Costa Rica, Mexico, and Brazil.
